New sources of sustainable food are vitally important to the future of our planet. On Sunday, January 17 the Winter Enrichment Program will dedicate a day to the future of food, looking at the important scientific progress being made in sustainable agriculture and the search for new food for the world.

Here’s a closer look at our food-related events for January 17:

Fresh Water or Fresh Ideas?
The Move Toward Sustainable Practices in World Food and Agriculture
With Ryan Lefers, Moustapha Harb, Mariam Awlia, Josh Lefers and Nada Aljassim

Agriculture is by far the largest global water consumer, with an estimated 70% of global fresh water use going to agriculture. This four-day workshop will look at the current state of agricultural fresh water and resource use in the global food supply and consumption chain, then move on to discuss new technologies for food production that have the potential to significantly reduce the freshwater and resource footprint of world agriculture.

A Dual Role For Plant Cell Walls: Advances in Human Health and Biofuel Production
With Geoff Fincher

Prof. Geoff Fincher will look at recent advances in human health and biofuel production through work on plant cell walls, including the progress being made to exploit the dietary benefits of cereal grain wall polysaccharides in human health to greatly reduce the risk of serious diseases as colorectal cancer, type II diabetes and cardiovascular disease.

Quinoa: Modern Improvements for an Ancient Crop
With Eric Jellen

Quinoa is growing in popularity worldwide, yet this and many other increasingly popular foods are still relatively under-researched by scientists. Professor Eric Jellen will present the work of his laboratory toward deepening the scientific knowledge base for understudied crops.
