Dear KAUST Employees & Community Members,

During the Holy Month of Ramadan, people consume more ready-made take-out foods, placing a much greater demand on restaurants Kingdom wide to provide safe, wholesome food. Consequently, this substantially increases the risk of foodborne illness.

Foodborne illness arises from the improper storage, handling and preparation of food. Foodborne illness can range from mild symptoms to severe and in some cases hospitalization is required. People who are immunocompromised, such as the elderly, children, persons with comorbidities and pregnant women are even more vulnerable.

The symptoms of foodborne illness can include high fever, nausea, vomiting, cramps and diarrhea. If you experience these symptoms, go promptly to the nearest medical center for treatment. Normally, foodborne illness can have an onset of symptoms ranging from one hour to 24 hours.

To reduce the incidence of foodborne illness purchase food only from establishments that display their government-issued certifications prominently and avoid using street vendors due to the increased risk of poor hygiene practices. In addition, make sure that ground meat, and in particular poultry products are cooked thoroughly, and that vegetables and fruits are washed and cleaned of soil. Food contact surfaces should be regularly cleaned and sanitized. Hot food must be served and consumed while still hot. Ready-to-eat food must be stored in refrigerators until they are served. Avoid storing hazardous food at room temperature during long road trips. Purchase food in original packaging, avoid food packaged in secondary containers, and ensure you purchase and consume food within the shelf life date of the product.

Additionally, proper hygiene among food handlers is essential; regular and adequate handwashing must occur, when hands are contaminated and in between glove use.

In general, do not consume food if you detect abnormal changes in color, taste, or smell.
